Where are the best tacos in San Antonio, and how far are they from the neighborhoods JBSA families buy in?

Short answer
San Antonio is the cradle of Tex-Mex and its taco map runs west and south of downtown — the Deco District on Fredericksburg Road, the West Side where the puffy taco was invented, Nogalitos on the south side. The JBSA housing map runs the other way: Alamo Heights and Terrell Hills inside 410 near Fort Sam, and Converse, Universal City and Schertz-Cibolo out by Randolph. So the honest version of this article is a drive-time table. The good news: nothing on it is more than 25 minutes, and the northeast side has one Michelin-listed pit of its own.
Inside 410 — the Fort Sam side
Ro-Ho Pork & Bread — N. New Braunfels Ave. Tortas ahogadas from Guadalajara, the drowned pork sandwich; the taco list's one non-taco essential. It sits on the Alamo Heights / Terrell Hills line. Live here: Alamo Heights & Terrell Hills — 1920s–50s homes, their own school district, 10 minutes to Fort Sam Houston and BAMC, and the highest price band in this guide.
Los Weyes de la Asada — Avenue B, near the Pearl. Carne asada done right; Texas Monthly wrote a whole piece on its steak night. Con Huevos Tacos. The breakfast-taco standard-bearer, skyline patio. Same neighborhoods, 10–15 minutes.
The Deco District and the West Side — the pilgrimage
Garcia's Mexican Food and The Original Donut Shop — Fredericksburg Road. Two of the city's canonical breakfast-taco counters, a few blocks apart. Ray's Drive Inn — West Side. The place that claims to have invented the puffy taco, and Texas Monthly's pick for it. Henry's Puffy Taco Express — Bandera Road. The other puffy-taco dynasty (same family, different branch). Maria's Cafe — Nogalitos. South-side classic. Taquitos West Ave. The al pastor trompo everyone sends you to.
Drive time: 20–25 minutes from Alamo Heights, 30–40 from Randolph. Worth it on a Saturday; not the commute side of town.
The Randolph side — Converse, Universal City, Schertz-Cibolo
Texas Monthly's list is thin out here, and we won't pad it. What it does give you: Burnt Bean Co. — Seguin. On the taco list and the BBQ Top 50 and the Michelin Guide; the barbacoa taco and the brisket. From Schertz it's 20 minutes east on I-10. Live here: Schertz-Cibolo — 2000s–2020s subdivisions, Schertz-Cibolo-Universal City ISD, 10 minutes to Randolph's main gate, the price band most Randolph families land in. Universal City is the town at the gate itself, 1960s–80s ranches, cheapest of the three; Converse sits between Randolph and Fort Sam with 1980s–2010s tracts and the shortest commute to both.
Alamo Ranch — far west side, the newest subdivisions in the metro and the closest to Lackland. Live here: Alamo Ranch — 15 minutes from Ray's and Henry's, which is the best taco commute on this page.
Why this is a housing article
JBSA is three bases and the taco map only lines up with one of them. If you're Lackland-bound, Alamo Ranch puts you next to the West Side puffy-taco corridor and the cheapest new construction in the city. If you're Randolph-bound, you're trading taco proximity for Schertz's schools and a ten-minute gate, and Burnt Bean is your consolation.
